This salad is great as an accompaniment to another dish or works even as a light meal. You can use it with any kind of kale, but lacinato is my favorite. Spinach would work, too. Massaging it is key to rid it of its bitterness (its cellulose structure breaks down) and make it less tough, as well.
- 1/4 cup dried cranberries
- 1/3 cup crushed walnuts
- A few bunches of kale, washed, massaged, and ripped or cut up into smaller pieces
- 1/2 cup balsamic vinegar
- 1 Tbsp apple cider vinegar
- 2 Tbsp olive oil
- 1 tsp honey
Mix the vinaigrette ingredients together. Taste and adjust as desired. Toss with kale, walnuts, and cranberries.
