Hrenovka, basically a sausage wrapped in dough, is my favorite food to get when my husband and I are out and about in Croatia and looking for a snack from a bakery. He always gets burek and I get a hrenovka. It’s our tradition. And I, quite frankly, am obsessed.

  • 4 cups of all-purpose flour
  • 1 packet of dry-active yeast
  • 3 eggs
  • 10 oz of milk
  • 6 oz of buttermilk
  • 3 Tbsp of oil
  • 8 Tbsp butter
  • 1 tsp of sugar
  • sausage (bratwurst or, worst case scenario, hot dogs)

First, in a large bowl activate the yeast by adding the warm milk, yeast, salt, sugar, and a little flour. Allow to rise.

When the yeast has risen, add the buttermilk, oil, and eggs. Add enough flour so that the dough does not stick to your hands and allow the dough to rest for 30 minutes.

Preheat the oven to 350 degrees.

Melt the better.

Next, roll out the dough to be about 1 cm thick and brush with melted butter. Roll like a jelly roll and then roll out again to 1 cm thick. Brush with melted butter and again roll into a jelly roll. Repeat this one more time then roll out again.

Cut long strips of dough and wrap around the sausage. Brush with egg yolk and bake in the oven until golden brown.
Serve with mustard.
