Easy Croatian Summer Salad

This simple, easy salad has always made an appearance at my family’s summer meals, as it would take advantage of the generous bounty of my grandmother’s garden or the deliciousness of the heirlooms I would find at my local farmers market. How else to use up all those tomatoes and cucumbers! Well, there are other ways, but this is one and a tradition my grandmother brought with her from her village. This tastes particularly good with anything grilled (might I suggest kielbasa?) and even šnicla. You can even throw peppers in if you have, which add a nice crunch to the salad.

  • 4 large tomatoes
  • 1 cucumber
  • 1 small onion
  • 1 pepper
  • olive oil
  • white vinegar
  • salt and pepper

Chop or slice the tomatoes, cucumber, onion, and pepper. Toss with olive oil, vinegar, and salt and pepper to taste. I add a good amount of pepper, so much so, that you can see the flakes throughout.
