Chicken with walnut sauce

This is a really quick and delicious meal that is perfect to prepare during the week. The sauce also works well served with roasted chicken or turkey.

  • chicken breast, thinly sliced or tenderized
  • olive oil
  • 1 tablespoon of butter or oil
  • 1 teaspoon of flour
  • 1 large clove of garlic, diced
  • 120 g of ground walnuts
  • water
  • pinch of Vegeta
  • parsley
  • salt + pepper

Salt both sides of the chicken and place into a frying pan with a dash of olive oil. Cook until cooked thoroughly and browned on both sides. Set to the side. (Alternatively, you can roast the chicken breast in the oven.)

Simultaneously, add the butter and garlic to a sauce pan. Once the garlic begins to brown, add the flour and stir for a minute or so until the zaprška or zafrik (or roux, as browned butter and flour is called) browns. Next, add the walnuts, Vegeta, and parsley, then gradually adding the water until the sauce is smooth. Add salt and pepper, as needed. Continue to cook for a few minutes or until it has thickened up nicely.

Serve drizzled over the chicken. I like a lot of sauce, but that is up to you.
