Roasting pumpkin seeds is a great way to get the most out of a fresh pumpkin that you are roasting or even a jack-o-lantern you are carving, perhaps, for Halloween. Plus, you can get creative and sprinkle anything from celery salt to chili powder to garam masala.
- Seeds scooped out of a fresh pumpkin
- olive oil
- other spices (optional)
Preheat the oven to 400°F.
Separate the seeds from the stringy fibers of the pumpkin and place into a sieve. Wash under running water to remove any bits of pumpkin flesh then spread on a cookie sheet. Drizzle with olive oil and then sprinkle with salt (and/or any other spices).
Roast for about 10-15 minutes or until starting to brown.
