Toddler cheese crackers

My daughter will just about never say no to cookies or crackers, so when I was trying to find creative ways to get more vegetables in her diet, I thought why not make a homemade cracker. There are a ton of recipes for cheddar toddler crackers but cheddar isn’t something common here in Brussels, (though you can find it at any of the British stores). But gouda is and since it is very mild in flavour, I thought that would go over better with her.

You can substitute any kind of cheese here and other kinds of root vegetables (or only use carrots) and not go wrong–at least in terms of toddler taste buds. Though I must say, friends were enjoying these too at a recent party. But for adults I would probably sprinkle some parmesan or some kind of spice + salt to give them more of a kick.

  • 1/4 cup of grated carrot
  • 1/4 cup of grated parsnip
  • 2/3 cup of grated gouda
  • 1 cup of plain flour
  • 50 grams of butter, softened
  • 4 tbsp of water

Preheat the oven to 180 C.

In a large bowl, rub the butter and flour together until the mixture looks a bit like wet sand, then add the water. Next add the cheese and carrot and incorporate them into the dough with your hands until well combined.

Sprinkle a bit of flour onto your work surface and then roll out the dough. Cut using whatever shapes you have then place on a greased (or silicone) pan and bake for 10-15 minutes.
